Espresso is coffee brewed by forcing a small amount of nearly boiling water under pressure through finely ground coffee beans. We like our espresso to be smooth, silky, and syrupy with a sweet, chocolate-like aftertaste. It also produces the definitive Crema, by emulsifying the oils in the ground coffee into a colloid (a microscopic mixture of oils and water), which does not occur in other brewing methods. That's why we use espresso as the basis for all of our coffee beverages as opposed to regular drip coffee. It just tastes better!
One 2 oz double espresso shot has about 80 milligrams of caffeine. Whereas a 12 oz brewed coffee has about 120 milligrams. So actually there is more caffeine in an average cup of drip coffee than in espresso.
